Corn oil as an ingredient

Corn oil is a polyunsaturated vegetable oil. It is one of the most widely used cooking oils. Corn oil is often used in deep-fat frying and in the preparation of margarine.

Corn oil is rich in unsaturated fatty acids, that is, fatty acids whose carbon atoms are deficient in hydrogen atoms. It is more strongly flavored than other oils.

Peanuts

The peanut is the most popular nut in the United States. The peanuts plant itself (Arachis bypogaea) grows a flower that sends a shoot down into the ground, where it enlarges into tissue that becomes the peanut.

Vinegar of acetic acid is a colorless, waterlike liquid that has a piercingly sharp, vinegary odor and a burning taste.

In United States vinegar and acetic acid are generally recognized as safe for use in foods and are classified as GRAS under the Federal Regulations.

Milk fat component in ice cream

Milk fat or butterfat, as it is sometimes called, is the most important component of ice cream. It is also the most expensive major ingredient of ice cream, and so the higher the fat content, generally the more expensive the product.

Milk fat gives ice cream a rich and creamy flavor. Fat also contributes to producing a smooth texture and greater resistance to melting.

The fat also is a concentrated source of calories and contributes heavily to the energy value of ice cream.

A milk fat content between 14% and 22% is ideal for producing a rich tasting, full bodied ice cream. According to US standards, ice cream must contain at least 10% milk fat, before the addition of bulky ingredients and must weigh a minimum of 4.5 pounds to the gallon. Ice cream made with less than 14% milk fat is weak-bodied coarse and icy.

Decreasing the fat content of ice cream decreases the creamy sensation and increases the intensities of flavors of skim milk powder and of corn syrup.

It also impacts on added flavors, since there are many flavor components that are fat soluble, which are released to the olfactory senses as fat melts.

Wasabi

Wasabi, Eutrema japonica Matsumara, also belongs to the Brassicaceae but is a different species than horseradish. The plant is a semi-aquatic member of the cabbage family. Its stem is ground into a powder that is in turn blended into a paste.

It is very difficult to grow and therefore expensive; outside of Japan, it can be found only in specialty stores and the more upscale sushi bars.

The part of the plant that is used is not the root but a rhizome, accounting for the green color of the spice.

The taste of wasabi is somewhat fresher and purer than that of horseradish, but has similar burning and lachrymatory (tear-causing) effects.  A 10th century Japanese medical encyclopedia documents wasabi as an antidote for food poisoning.

Wasabi is mostly used to flavor sashimi, sushi dishes (sushi is cooked, seasoned rice, along with other ingredients), and soba. In Japanese restaurants, wasabi is typically served ground and packed in the corner of the plate in a tiny cone.

Wasabi is a peculiar ingredient in Japanese cuisine, indicative of a liking for hot tastes in culture of cooking otherwise best known for trying to keep the individuals flavors of the ingredients as pure as possible.

Raisins

Raisins didn’t become popular in Europe until the 11th century when knights returning home from the Crusaders brought raisins back with them from the Mediterranean and Persia.

Raisins are one of the most popular types of dehydrated foods products. Raisins are dried fruit of various kinds of grapes that contain considerable sugar and are cured in the sun or in an oven.

Almost all pizza packaging and commercials show a pizza slice lifted off the pan with strands of melted mozzarella cheese stretching out from the slice to the pan.

Nutmeg as food ingredient

Nutmeg is a spice obtained from nutmeg tree Myristica fragrans. It is related to mace, which is obtained from the covering of nutmeg.

It is evergreen tree, 15 to 20 m in height and grows in Java, Sumatera, Borneo, Penang, Moluccas, and in several other islands of the Indian Ocean.

Secret ingredients of root beer

The key component in root beer is the bark of the root of the sassafras tree, which is easily dug and rubbed off.

The use of tomato paste

Tomato paste is concentrate of pureed tomatoes sold in cans or at double strength in tubes. Tomato paste is tomatoes cooked for several hours, then strained and cooked longer to reduce them to a thick concentrate.

Tomato paste is usually considered as semifinished product because it is commonly used as an ingredient in other food products. Tomato paste and puree are important ingredients for pickles and sauces.

Its primary use is in tomato ketchup but it is also used in salsas, pizza and pasta sauce, sweet pickles sauce, tomato chutney sauces and other thick sauce. Functionally it provides flavor, color and consistency.

Food applications of psyllium

Psyllium is cultivated chiefly in the Mediterranean area of Europe and in India. It is a harvested grain. Psyllium comes from plants of the Plantago genus. Psyllium derives its name from the Greek psylla meaning ‘a flea’.

Psyllium is used as a food or food component for centuries. It is also available in the American diet in breads, pastas, grains, snacks, and ready to eat cereals.

Due to psyllium’s various health benefits, many efforts have been made by nutritionist and food manufacturers to develop methods for incorporating it into food products.

Psyllium has been referred by experts as a gelling agent forming a weak gel-like structure similar to those formed by xanthan and other related polysaccharides, with rigid and ordered structures in solutions. Psyllium mucilage is used in ice creams and frozen desserts as a thickener and stabilizer.

Traditionally it use involve spreading psyllium on bread, mixing it with honey, marmalade or stewed fruits, using it in soup, or mixing it with wheat flour as a thickener.

Psyllium also traditionally been used as an ingredient in the making of chocolates and in jellies.

Energy drinks such as Red Bull, Monster and Rick Star are all the rage today, especially among younger consumers.

The major ingredient in the numerous energy drinks is caffeine, mixed along with other caffeine –like chemicals such as guarana, taurine , as well as several other psychoactive ingredients.

Caffeine is usually the main added ingredient in energy drinks. It is a stimulant and these drinks generally contain around 80 to 100 mg preserving.
