Canola oil is derived from the canola plant, which is itself derived from the rapeseed plant. The canola plant (Brassica napus L.) was developed in the 1970s using traditional plant breeding techniques.
Canola crops are used to create canola oil and canola meal, which is commonly used as animal feed. There are claims that canola oil is one of the healthiest vegetable oils, as it reduces disease-related factors and improves health.
Canola is a good choice for cooking and baking because it’s low in artery-clogging saturated fat (lower than olive oil) and high in heart-healthy mono- and polyunsaturated fats.
Canola oil has a neutral flavor that makes it a perfect addition to any meal. Canola oil can be used to saute, grill or even fry with its extremely high cooking temperature. Canola oil can also be used as a fuel alternative to diesel and a component of items made with plasticizers, such as tires.

Vegetable oils
Nutritionists have recommended vegetable oils as an important part of a healthy diet due to their high contents of fatty acids (FAs) besides their traditional sources, such as fish oil and algae. The vegetable oil market is strongly correlated to the protein meal market as both are largely the co-products resulting from the processing of oilseeds.
Vegetable oil which can be extracted from oilseed is considered one of the main components of food, and it can be also used for the production of non-conventional alternative fuels.
Vegetable oils constitutes an important component of human diet. Major edible vegetable oils in terms of production include from soybean, canola, sunflower and peanut. They are source of edible FAs (saturated, monounsaturated or polyunsaturated), which play an important role in cellular metabolism as a way to store energy and also by providing energy when required.
Oilseeds which can yield edible oils are also categorized into two subclasses.
*The first is conventional oilseed that can yield oils for every day edible purposes such as sunflower oil, canola oil, and soybean oil.
*The other class of oilseeds is non-conventional that yield oils that have some beneficial functional properties such as flaxseed oil and is normally used in rather small doses.

In industrial food manufacturing, where food matrices can be complex, unit operations rigorous, and finished products require certain minimum stability to last through the supply chain and the eventual consumption, the oils used in the formulations often require additional oxidative stability.

What is a refined vegetable oil?
Vegetables oils are recovered from plants by chemical extraction using solvent extracts. The most common extraction solvent is petroleum-derived hexane.
Crude vegetable oils contain trace amounts of naturally occurring materials such as proteinaceous material, free fatty acids, and phosphatides. Therefore crude vegetable oils have to be refined to remove undesirable substances.
Refined vegetable oil is a vegetable oil obtained by expression, neutralized with alkali, bleached with absorbent earth and/or activated carbon, and deodorized with steam.
Neutralization or conventional caustic refining has been protected for over a century and has become the most widely used process for purifying oils.
The typical oil refining process includes degumming, chemical or physical refining, bleaching, vinterization, and deodorization. Refined oils should not contained more than 0.25% free fatty acids and 0.10% moisture by weight.
